A new study revealed that eating broccoli stalks enhances the body’s immunity because they contain higher percentages of fiber and some essential minerals compared to florets.
Benefits of broccoli stalks
According to what was published by The Sun website, Stephanie Johnson, an associate professor of clinical and preventive nutrition services at Rutgers University in the United States, said that the functional difference between parts of the plant leads to variation in its nutritional components. While some plant compounds are concentrated in the florets, the stems are characterized by an abundance of insoluble fiber.
These fibers play an important role in enhancing bowel movement, improving bowel regularity, and supporting the balance of beneficial bacteria in the digestive system. These are factors directly related to colon health, reducing the risk of constipation, and supporting immunity in the long term.
The benefits of broccoli stalks are not limited to fiber only, as they also contain higher amounts of potassium and calcium than florets.
Potassium is important for regulating blood pressure and supporting heart health, while calcium plays an essential role in bone health and muscle function.
In contrast, the florets remain rich in beneficial plant compounds such as antioxidants, vitamin C, vitamin K, and folic acid, which makes the two parts nutritionally complementary, not competitive. Nutrition experts stress that broccoli stalks are not necessarily “healthier” than the florets, but combining the two parts together in the diet provides wider nutritional diversity and reduces food waste.
