- A kilo of meat with a percentage of fat, cut into cubes.

- A teaspoon of lamb fat.
- Onion slices
- Slices of colored bell pepper.
- Tomato cubes.
- Hot peppercorn.
- Salt and black pepper.
- A cup of hot water.

Steps to make meat casserole with onions
- Place the pot on the fire with the local ghee in it, let it heat up, then add the meat cubes.
- Saute the meat to give it a thermal shock, then add lamb fat to it, which gives it a rich taste.
- Add the onion slices to the meat and leave the pan covered until the onions caramelize, stirring them from time to time.
- Then season the meat with salt and black pepper, add the diced tomatoes, stir, and leave it on the fire for 10 minutes.
- Now put the meat and onions in a pottery casserole and add a cup of hot water to cook it.
- Place the bell pepper slices and hot pepper pods on the surface of the casserole and cover it with parchment paper.
- Place the meat casserole with onions into the oven at 200 degrees for a full hour.
- Finally, take out the meat and onion casserole and serve it with white rice and salad.

How to make Hilla kebab

- Saute the mastic in ghee, then add the meat cubes and sauté them until their pores close and retain their internal juices.
- Season the meat with seven spices, salt, black pepper, and sugar, which speeds up its cooking.
- Add onions to the meat in a very large amount until the meat oozes into the onions.
- Turn off the heat on the Hilla kebab and leave it covered to simmer for an hour to an hour and a half.
- Stir the challah kebab from time to time, adding two drops of hot water each time.
- Ten minutes before the meat with onions is cooked, add the diced tomatoes and leave the challah kebab to cook completely and become soft and melting meat.
- You can light a charcoal and place it on foil in the middle of the meat with onions while covering it to release the grilling aroma on the meat.
