Spinach is one of the most nutrient-rich leafy vegetables, whether eaten raw or after cooking. It contains a wide range of vitamins, minerals and antioxidants that support heart, immune system and bone health.

Raw or cooked spinach?

According to the VeryWellHealth website, “Cooking spinach can provide some health benefits, as it helps reduce the amount of oxalate compounds present in it. These compounds are natural substances that may hinder the absorption of some minerals such as iron and calcium. When the amount of oxalate decreases during cooking, the body becomes able to absorb vitamins and minerals better.”
Cooked spinach is also easier to digest for some people, especially those who suffer from digestive disorders such as irritable bowel syndrome or inflammatory bowel disease.

In contrast, raw spinach retains a greater amount of some heat-sensitive vitamins, which may be affected during cooking.
